In the process of cooking en brochette or brochette generally refers to food which is cooked, and at times served on brochettes or skewers. The French expression usually applies to French cuisine, where as other terms like shish kebab, satay or souvlaki generally portray the same technique in other dishes.

The skewer in its self, the brochette can be useful dipping pieces of food in fondue. Hence in these situations it generally takes a slightly different appearance and is sold as a brochette de fondule or as a group along with the fondue pot.

Some dishes similar to this are Anticucho, Espetada, Pincho Moruno, Satay, Shashlik, Shish Kebab, Souvlaki and Yakitori.
