Leaven is a substance that is used as an ingredient in doughs and batters. This generally helps the dough to rise. This is done with the help of moisture, heat, acidity that helps the leavening agent to give out any kind of gas or carbon dioxide. These generally trap as bubbles inside the dough. Later when the heating or baking process is complete everything sets really well. This is the reason why cakes and even breads turn out to be very soft and of course sponge like textures. These leavening agents are baker's yeast, sourdough, baking powder, baking soda, ammonium bicarbonate, potassium bicarbonate, potassium carbonate, mono calcium phosphate and sodium acid phosphate.
Unleavened bread is generally prepared without the help of leavening agents. They are mostly flat breads. This bread generally holds a lot of symbolic importance in Judaism and Christianity.
