The word 'aloo' or 'alu' means potato in Indian cuisine; the word occurs in several Indian dishes like Dum Aloo, Saag Aloo and Aloo Gobi among others. The word is used to refer to potatoes both in its raw as well as cooked form. Potatoes are widely grown in the Indian subcontinent especially in the eastern part of the country in the Indo-Gangetic plains.

Potatoes occur in Indian cuisine primarily in boiled form and are used in dishes as cut pieces; potatoes are used in combination with vegetables like with spinach (saag) or are served in the form of a dish, with or without a sauce, and containing various spices and condiments.

A famous dish made of potatoes is Dum Aloo Kashmiri; the dish comprises of a large potato stuffed with dry fruits and vegetables and cooked in a rich gravy. Potatoes are widely used in Indian cookery and form one of the staple foods in the diet of the people of South Asia along with rice, wheat and pulses.
