When you are using the term 'poke' in the context of salad you are talking about a kind of herb that is primarily found in America and it is grown through out the year. The herb is known to have white flowers and its berries are having the shades of black and red colour. The edible part of the herb is its stem that is quite fleshy and you can use this very part of the herb while making salad.

The making of salad is the prime use of the herb but the word 'poke' that describes the herb has given birth to many of the other meanings also and prime among them is its use in the context when you intend to convey the idea of instigating somebody to do something that can be said to be a bad act.

Phytolacca americana is an annual that grows in warm weather and high humidity. The leaves are edible in spring and very early summer before the plant flowers, if boiled twice, with new water the second time. The plant bears black berries, which contain the seed. They germinate the next spring after having passed through a bird, forming at first an asparagus-like shoot and then a leafy bush. It is a tonic and, in large amounts and if not cooked thoroughly, an emetic.
