You just did.  And you did it right.

Actually, the word was created by the folks in Louisiana after they noticed a large influx of Canadians to their territory.  The Louisiana style of speech is rather casual and some words or syllables just sort of slide together.  So the natives pronounced the word "Canadian" as "Cajun."  The "cajuns" brought their style of cooking to Louisiana and married it up to the somewhat more spicy and more seafood oriented cuisine of their new home.  And that's how "Cajun Cooking" came to be called that.
